Roasted Carrot “fries” With Spicy Harissa

These roasted carrots “fries” are favorite side dish in our home! They only take about 20-25 minutes to roast and they go with anything from a nice filet to a causal turkey burger!

Ingredients

  • 5-6 Large Carrots
  • Juice of 1/2 Lemon
  • Zest of 1/2 Lemon
  • 2 Tbsp Olive Oil
  • 1/2 Tbsp Harissa Paste
  • 1 Tsp Garlic Powder
  • Salt (To Taste)
  • Pepper (To Taste)
  • Chopped Parsley or Mint For Topping

Directions

Preheat oven to 400 degrees.Wash and chop carrots into “French Fry” like pieces. Mix olive oil and harissa paste, garlic powder, lemon zest and lemon juice together in a small bowl. Coat carrots evenly with harissa mixture and spread carrots onto a roasting pan lined with dry parchment paper. Roast in oven for about 12-15 mins on one side and then flip the carrots and cook until they become a bit crispy. Top with chopped parsley or mint and your good to go! Hope you enjoy!
