This simple asian inspired vegetable dish goes with almost anything! It takes only minutes to cook and you can get creative with extra vegetables to add to the bok choy.
- 2 Inch Knob of Ginger
- 5 Cloves of Minced Garlic
- 2 Tbsp of Olive Oil
- 2 Heads of Bok Choy
- Salt and Pepper to Taste
Finely mince the garlic and ginger into a sauté pan with 2 Tbsp of olive oil. (I use a microplane to get the ginger and garlic super fine). Allow the ginger and garlic to sauté until it becomes fragrant, be careful not to overcook the garlic. Prep the bok choy by splitting the leaves long ways so the white bulb and green leaves stay in tact. Add the bok choy to the pan, cover with a lid and allow to cook for 10 minutes, stirring occasionally. Finish with salt and pepper to your liking.
*Feel free to add in kale ribbons or spinach to the bok choy for extra veggies!
