Cauliflower “rice” is a staple in our home since we don’t really eat grain. I love using cauliflower rice as a vegetable side to most of our meals, because it’s incredibly easy to make super versatile. This dill cauliflower “rice” is a go to recipe of mine when serving any type of fish or greek inspired meal like these greek chicken meatballs. If you don’t like dill you could easily swap the dill for basil or parsley.
- 1 Bag of Cauliflower Rice
- 1 Tsp Garlic Powder
- 1/4 Tsp Red Pepper
- Salt and Pepper to Taste
- Zest of 1/2 Lemon
- 2 Tbsp Olive Oil (or grass fed butter)
- 1 1/2 Tbsp Chopped Dill
I like to use a bag of frozen riced cauliflower ( you can get at most grocery stores). Heat up the frozen cauliflower rice in a sautè pan. Once the cauliflower rice is cooked, season the rice with salt, pepper, garlic powder, and crushed pepper flakes. Give it a stir and then right before pulling from the stove add olive oil, lemon zest and chopped dill. Enjoy!
