We have been getting some amazing acorn squash lately at our local farmers market and I have been loving roasting it up and adding some different spice mixes with it! This one is very warming and a little spicy, and I love to serve it on top of a big salad for a simple plant based dinner!
- Acorn Squash
- Chilli Powder
- Olive Oil
- Parsley or Cilantro
Heat oven to 375 degrees. Quarter the acorn squash and scrape out the seeds. Place acorn squash quarters onto a baking sheet lined with parchment paper and roast for about 35 to 40 mins. The squash should be fork tender and starting to brown a little. Remove and add a dash of cumin and chilli powder, pinch of salt and pepper to each quarter. pop back in oven for about 3 mins. Then remove from oven and top with chopped parsley or cilantro and a drizzle of olive oil.
