Four Homemade Chocolate Truffles Recipes Sweetened With Dates

These homemade chocolate truffles can be best compared to a mounds candy bar but my version has much less sugar (I only use a few dates) and a few simple ingredients! Once you get a hang for the filling part it’s really fun to experiment with other filling flavors! So far we have made our “original” (most similar to a mounds bar), mint, tumeric ginger, and matcha. These are easily stored in the freezer and you can grab one when you need a little chocolate pick me up. I also think these would be really fun to serve as dessert at a dinner party! They are super decadent, very versatile and so easy to make. See below for my 4 different recipes; TurmericĀ Ginger, Mint, Matcha and Original. If you like your chocolate shell to be more rich, use half dark chocolate chips (I use Enjoy Life Dark Chocolate Chips here) and half unsweetened pure Cocoa Chips (I get mine from Trader Joe’s). If you prefer milk chocolate or semi sweet chocolate feel free to use your favorite melting chocolate chip.

INGREDIENTS

Original Flavor (most similar to a mound):

  • 3 Medjool Dates, Pitted
  • 2 Cups Unsweetened, Shredded Coconut
  • 1 Tsp Vanilla
  • 2 Tbsp Filtered Water

Ginger Turmeric:

  • 3 Medjool Dates, Pitted
  • 2 Cups Unsweetened, Shredded Coconut
  • 1 Tsp Vanilla
  • 1/2 Inch Ginger Root
  • 1/2 Tsp Turmeric
  • 1 Tbsp Cinnamon
  • 2 Tbsp Filtered Water

Mint:

  • 3 Medjool Dates, Pitted
  • 2 Cups Unsweetened, Shredded Coconut
  • 1 Tsp Vanilla
  • 2 Tbsp Filtered Water
  • 5 Drops Peppermint Essential Oil
  • 2 Tbsp Fresh Mint Leaves

Matcha:

  • 3 Medjool Dates, Pitted
  • 2 Cups Unsweetened, Shredded Coconut
  • 1 Tsp Vanilla
  • 2 Tbsp Filtered Water
  • 1 Tsp Matcha Powder

Chocolate Shell:

  • 1/2 Cup Enjoy Life Chocolate Chips
  • 1/2 Cup Purely Unsweetened Cocoa Chips

DIRECTIONS

Add shredded coconut, medjool dates, and spices into a food processor with the S blade inserted. (My favorite here) Turn the food processor on and let all ingredients combine for one to two minutes. While the food processor is on, add the vanilla and filtered water down the food processor spout. After a couple minutes, the mixture should form up into a ball. Once this happens, turn off the food processor and place the mixture in a ball. Roll into 1/2 in – 1 in balls and set onto a plate lined with parchment paper.

In a double boiler combine chocolate chips and allow to melt. Once melted, use a measured table spoon to drizzle the chocolate over the filling mixture. Place in freezer for 15 minutes to allow to set. Enjoy!!
