Green Goddess Salad

INGREDIENTS FOR DRESSING

  • 2/3 Cup Raw Cashews
  • 2 Cloves Garlic
  • 1.5 Tbsp Apple Cider Vinegar
  • 2 Generous Pinches of Salt
  • Black Pepper To Taste
  • 2/3 Cup Loosely Packed Dill (No Need To Chop)
  • 2/3 Cup Mint Leaves (No Need To Chop)
  • 3/4 Cup Water
  • Zest of 1 Lemon
  • Juice of 1 Lemon
  • 2 Tsp Capers

INGREDIENTS FOR SALAD

  • 6 Cups Mixed Greens
  • 1 Diced Avocado
  • 1/2 Cup Shaved Red Cabbage
  • 1 Tbsp Capers
  • 1/2 Cup Chopped Endive
  • 2 Tbsp Chopped Dill
  • Fresh Cracked Black Pepper To Top

DIRECTIONS FOR DRESSING

This recipe could not be simpler, combine all ingredients into a NutriBullet, high speed blender, or food processor and process until smooth. The dressing will last about 3-5 days in the fridge and may need lemon juice or a splash of water to thin out prior to pouring over greens.

DIRECTIONS FOR SALAD

Arrange all salad ingredients in a serving bowl and toss with dressing. Top with cracked black pepper and some dill and enjoy!
