Simple Romaine Ribbon Salad

This romaine salad is simple, light and fresh! The fresh dill tossed throughout the salad and thinly sliced green onions really play off one another and pack a punch of flavor. I love to serve this salad in a big ceramic bowl that has been chilled in the fridge. This way the romaine stays extra crisp and fresh! 

INGREDIENTS FOR DRESSING

  • 1/2 Cup Olive Oil
  • 3 Cloves Garlic
  • 1 Tsp Fresh Black Pepper
  • 1/8th Tsp Crushed Red Pepper (Optional)
  • Juice of 1 1/2 Lemons
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tsp Coconut Aminos
  • 1 tsp salt

            INGREDIENTS FOR SALAD

  •  3 Green Onions (Scallions, White and Green Parts)
  • 2 Head Romaine Chopped into ribbons
  • 2 Tbsp Chopped Dill

DIRECTIONS FOR DRESSING

Mince garlic using a garlic press or a micro plane. Combine with olive oil, pepper, coconut aminos, crushed red pepper, apple cider vinegar, lemon and salt. Whisk together in a mason jar and store in fridge for up to one week.

DIRECTIONS FOR SALAD

I prefer to make this salad in a chilled bowl, so store a serving bowl in the fridge or freezer for 5-10 mins to make it very cold. Add your romaine ribbons, chopped green onions and chopped dill and toss with the dressing. Serve and enjoy!
