Rosemary Roasted Potatoes

Fork smashed crispy roasted rosemary potatoes. Need I say more? This recipe is super easy, and makes for a great side dish! I should mention these potatoes hold up really well in the fridge and reheat perfectly. Making them the perfect side dish to make ahead or bring to someone’s home!


  • 2lbs Small Gold Potatoes
  • 1 Tbsp Olive Oil
  • Salt To Taste (I did 3 Tsp Course Sea Salt)
  • Black Pepper To Taste
  • 1/2 Tsp Garlic Powder
  • 1 Tbsp Roughly Chopped Fresh Rosemary


Preheat oven to 400, while oven is heating scrub up the potatoes well with vegetable scrub, I like this one. Line a baking sheet with parchment paper and place potatoes onto the sheet. Roast the plain potatoes for 40 minutes in the oven. Remove from the oven and (using the back of a fork) flatten the potatoes. At this point the potatoes should be soft on the inside and they should flatten relatively easily. Drizzle olive oil, and season the potatoes with salt, pepper and garlic powder and toss gently. Lastly, add your chopped fresh rosemary sprigs onto the seasoned potatoes and place back in the oven for 5-10 minutes to create that crispy potato skin! Serve and enjoy!
