Roasted Red Pepper Hummus

This roasted red pepper hummus is smooth and slightly sweet from the roasted red peppers. I love to serve this hummus as a quick and easy appetizer with fresh veggies, like carrots, cucumbers and endive. I like to make my own roasted red peppers to keep the recipe as clean as possible, but feel free to use jarred ones as well! 

INGREDIENTS

  • 2 14oz Can of Chickpeas (Rinsed and Drained)
  • 2 Red Peppers (deseeded and roasted)
  • 2 Cloves Garlic
  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Cumin
  • 1 Pinch Red Pepper Flakes (Optional)
  • Pepper To Taste
  • Salt To Taste
  • Juice of 1 Lemon
  • 2 Tbsp Olive Oil
  • 4 Tbsp Ice Water *Start with 2 Tbsp and add 1 Tbsp at a time to reach desired consistency

DIRECTIONS

Combine the chickpeas, garlic, spices, lemon juice, roasted red pepper, 2 tbsp of ice water and olive oil into a food processor and blend until smooth (about 3-5 minutes). Turn off the processor and scrape down the sides of the bowl to make sure all combines smoothly. Turn on the processor again and while running, add 2 more tbsp of ice water down the feed tube. Allow to blend another 3 minutes until smooth. Put in your favorite bowl, top with olive oil and enjoy!!
