Le Bistro Salad

The Co-op Le Bistro Salad

 I named this salad Le Bistro since it’s very similar to salads that you can order at a classic french bistro! Le Bistro Salad is my go to when I am craving something light, fresh and a touch zippy. The trick to this salad is mondonling your veggies for that paper thin crunch! 

SALAD INGREDIENTS

  • Spring Mix
  • Carrot Ribbons
  • Shaved Fennel
  • Shaved Cucumbers
  • Shaved Radicchio
  • Chopped Roasted/Boiled Beets

DRESSING INGREDIENTS

  • One Chopped Shallot
  • 1 Tbsp Dijon Mustard
  • 1 Tbsp Coco Amino
  • 3 Tbsp Olive Oil
  • 2 Tbsp Apple Cider Vinegar
  • 1/2 Tsp Garlic Powder
  • 1/2 Tsp Onion Powder
  • Salt & Pepper To Taste

DIRECTIONS

Combine all dressing ingredients into a mason jar or pyrex dish and whisk together. Combine all salad ingredients into a serving bowl, pour dressing over and toss until thoroughly combined.
