These roasted parsnips sprinkled with curry powder and served with chopped fresh cilantro are simply delicious! These make for the perfect side dish or just serve along side a big green salad like the Le Bistro!
Preheat oven to 425, and place parchment paper on a sheet pan. Simply peel the skin off the parsnips and cut into cubes or wedges. Place chopped parsnips on the parchment and pop into oven for about 40 mins. Flip at the 20 min mark and place back in the oven. Pull the parsnips out around 38 mins and season the parsnips with salt, pepper, curry powder, olive oil and a pinch of red pepper! Place back in the oven for about 2-4 minutes and then pull, place into a bowl and serve! These are very good dipped into a little honey mustard if I do say so myself!
