Rutabaga’s are a super fun root vegetable to cook with and are fairly easy to prepare. You can prepare and serve rutabaga just like you would potatoes. I prefer to dry roast rutabaga so the olive oil stays fresh and floral tasting on the fries versus that fried oily taste. Make sure to remove from the oven when they begin to brown, season the fries and finish in the oven for just a couple of minutes after tossing in some olive oil.
Preheat oven to 425 degrees and line your baking sheet with parchment paper. Give the rutabaga a quick rinse since they can be a touch sandy and peel the outside of them. (I just use this vegetable peeler). Then cut the rutabaga into “fry” like rectangles or cut into any shape you desire. Place in the oven for about 40 minutes, flipping them at the 20 min mark. After about 38 mins or so, pull from oven and season the rutabaga fries with the paprika, olive oil and salt and pepper to taste. Pop back into the oven for another 2-4 mins and your ready to serve! I like to eat plain but these can be served with ketchup or any dipping sauce you desire!
