Cauliflower rice is a go to staple in our home and it’s the one vegetable that I actually prefer frozen to fresh. We probably make a version of cauliflower rice once a week, whether it be a stir fry or this simple herby dill rice. Cauliflower rice is quick, easy and can be easily customized to go with any meal you’re serving and is great for those who are gluten free and grain free etc!
Start by “steaming” the frozen cauliflower. I like to add about 1/4 cup filtered water to a pan, add the bag of frozen cauliflower, and lid the pan. Cook on medium heat for 8-10 mins, fluff the rice half way through, and re-lid. Once the rice is fully cooked and the water has evaporated, season with garlic and onion powder, salt and pepper. Give the rice a good stir to make sure the seasonings are equally distributed throughout! Next, drizzle in your olive oil, lime juice and zest. Lastly, top with your fresh cilantro just before taking off the stove and give the rice another quick stir and serve immediately!
