This chop salad is crisp, crunchy, and oh so fresh! Since the dressing is made from whipped pumpkin seeds it's rich in protein and very hearty and filling!

Best Combined With - This salad would best combine with neutrals ( raw and steamed vegetables) or proteins like chicken, fish etc.


  • For Dressing:
  • 1/4 Cup Raw Pumpkin Seeds
  • 1/2 Cup Cold Water
  • Juice Of One Lime
  • 1 Tsp Onion Powder
  • 1 Tsp Garlic Powder
  • 1 Tsp Salt
  • 1/2 Tsp Smoked Spanish Paprika
  • 1/2 Tsp Chili Powder
  • 2 Cloves Garlic
  • 1 Tsp Black Pepper
  • 1 Tbsp Cilantro
  • 1 Tsp Coco Amino
  • Salad Ingredients :
  • Greens of Your Choice (I used Spring Mix. use whatever you like)
  • Cucumbers
  • Shaved Red Bell Pepper
  • Shaved Red Onion
  • Shaved Red Cabbage
  • Chopped Cherry Tomatoes
  • Avocado
  • Raw Pumpkin Seeds


Dressing -Combine all ingredients into a NutriBullet and blend until smooth. Pro tip: The dressing will thicken when left in fridge (which makes for a great dip!). The dressing can be thinned out with water and/or lime juice. Just add a little at a time and stir as you go until you get the desired consistency.

Salad - Chop and prep all of your desired vegetables, and add greens of your choice to a large serving bowl, dressing salad with dressing give it a good toss and enjoy!
