This pasta dish can be served warm or cold and could be a side or a meal with grilled chicken, shrimp or portobello mushroom on top. To keep this dish 100% gluten free, I like to use this pasta and to keep it free from all grains I like this pasta! 

Sweet and Spicy Cucumber Salad

Crispy, crunchy and cool. This cucumber dish screams Summer! I like to make a double batch of this recipe to have on hand for  snack or top a simple green salad with these flavorful cucumbers!

There is nothing better than a perfectly ripe Summer tomato. This plant based dish is light and fresh yet the beans make it a bit more hearty! This recipe calls for soaking beans, if you’re low on time, I suggest using this brand of canned beans!

Chickpea Salad with Roasted Red Peppers

This cold chickpea salad looks  perfect for hot Summer days. This dish could easily be made ahead of time making it the perfect plant-based dish for a Summer get together! These are my preferred brand of chickpeas when I buy canned!

Grilled Mushroom Antipasto Salad

I am most excited to try this dish! To make a meal out of this “salad” you could serve over a grain, like quinoa or farro to keep this dish fully plant-based or you could also serve with an animal protein of your choice!

Grilled Cobb Salad

Grilled cobb salad with fresh mint over a bed of quinoa. This salad can be served with or without the grain depending on your preference. I will make versions of this salad using the vegetables that look the most fresh at the farmers market!

This is my favorite coleslaw! The trick is to buy whole cabbages and shred them yourself! To keep this coleslaw fully plant-based I use this plant based mayonnaise.
