
Chipotle Lime Vinaigrette
This simple and fresh chipotle lime vinaigrette is perfectly tangy, slightly smokey and a touch zippy! This is a great make-ahead dressing that stores very well in the fridge for up to a week. You just need a few simple ingredients such as fresh lime juice, a good olive oil we love this olive oil, and some spices like cumin and smoked paprika, I love this paprika, it’s super smokey! We dress green salads with this vinaigrette. However, you can also use this vinaigrette to marinate vegetables, season grains, and grain bowls with this dressing, or just simply dip raw veggies into the chipotle lime vinaigrette. I will often take a bunch of vegetables like mushrooms, zucchinis, and bell peppers give them a quick brush with the vinaigrette and grill, or roast the veggies and then add them to salads or grain-free tortillas and top with guac for an easy veggie taco situation.

The Chipotle lime vinaigrette is best classified as a neutral, so it would best combine with either grains or proteins. However since this dressing does have some oil in it, it’s best not to overdo the combination of animal protein and oil or fat since oils, fats and proteins are slow to digest. If you plan on eating this vinegarette with animal protein, I would cut the olive oil in half for this recipe!
