Roasted tomatoes are a quick and easy way to elevate any dish! I love to roast up a sheet of cherry tomatoes and add them to salads like this vegan caesar or add the tomatoes to pasta dishes. They are also delicious on top of salmon or whitefish, like halibut or cod, if your in the mood for protein! These roasted tomatoes are quicker than quick to make and you only need fresh cherry tomatoes, salt and pepper, and a drizzle of olive oil at the very end! If we have fresh herbs on hand, I will add fresh basil or thyme to the end of the dish as well!

Roasted Tomatoes are a neutral so you can combine them with either starch or protein. If I were to pair with starch I would mix into a grain free pasta like this, you could also top a slice of toasted ezekiel bread with avocado and these tomatoes. For protein I love fresh, wild caught, salmon with these tomatoes and halibut is also delicious. For a quick and easy side dish you can wilt spinach and stir in these tomatoes too!

Roasted Tomatoes

These roasted tomatoes could not be easier and make for the perfect salad topping or neutral side dish to a protein or starch!

Ingredients

Units Scale

1 lb Cherry Tomatoes

2 Tbsp Olive Oil

1 Tsp Celtic Sea Salt

1 Tsp Fresh Black Pepper

Instructions

Rinse and strain your tomatoes thoroughly prior to placing them on a baking sheet lined with parchment paper. Roasted for 15 minutes or until the skin of the tomatoes starts to get crinkly on top.

Remove from oven and drizzle with olive oil and sprinkle with salt and pepper. Place back in the over for 2-3 minutes and enjoy! These are great as salad toppers, a snack, or even in a fresh tomato sauce!
