This roasted chickpeas recipe makes for the perfect crunchy snack and only take minutes to make! We like to make a double batch of these roasted chickpeas on the weekends (I like this brand of chickpeas the best). This way we have a simple snack to crunch on through the week! The roasted chickpeas also make for the best “croutons” to top salads and sprinkle int soups! I keep my seasoning simple with just onion powder, garlic powder, salt and pepper, but have fun with seasoning the chickpeas, you can use anything from za’tar to curry powders!

Practice Food Combining | Best Combines With Neutrals

Since Chickpeas are legumes and legumes are sort of fickney when it comes to food combining they are both equally a starch and protein, making them an “imperfect food” when practicing food combining. I personally find that for the easiest way to digest chickpeas is to combine with neutrals like green salads, raw and cooked vegetables! However, I find that I can tolerate small amounts of chickpeas with starches so I will often sprinkle a few chickpeas on top of a butternut squash soup or a similar starch- based soup!

Roasted Chickpeas

These perfectly roasted chickpeas are delicious to snack on and add a great crunch to salads and topping soups! You can season them how you would like. Go fancy with the seasonings, or keep it simple with just a sprinkle of sea salt!

Ingredients

1 14oz can Chickpeas

1/2 Tsp Garlic Powder

1/4 Tsp Red Pepper Flakes

1 Tsp Fresh Rosemary (Or Dried)

Pinch Of Celtic Sea Salt

Instructions

Begin by draining the can of chickpeas you can rinse if you would like but it’s not necessary. Next, line a baking sheet with parchment paper and spread out the chickpeas on the baking sheet. Season the chickpeas and place them preheated oven at 450 degrees for 20 minutes. Remove them at 15 mins and give the chickpeas a quick stir to make sure all the chickpeas bake/crisp evenly. Pop them back in for 5 mins. Eat them hot out of the oven or let them cool in a bowl! Store them in the fridge for up to 3 days. 

Notes

Note: If you allow them to cool or store them in the fridge, they will require a reheat to make them crunchy again!
