Almond butter is delicious, but creamy homemade almond butter is divine! To make creamy and raw almond butter, you’ll need raw, preferably organic almonds and an excellent food processor (this is my favorite food processor). Add 3 cups of almonds to your food processor using the S blade attachment. Press start and let the food processor break down the almonds into flour. Then the “flour” will build up into little balls and turn into a smooth and creamy raw almond butter. This recipe takes about 20 to 25 minutes from start to finish. You will need to scrape down the sides of the food processor at the 10 minute and 18 minute mark. At the 18 minute mark, I season the almond butter with a pinch of salt. However, you may use cinnamon, nutmeg, etc. Then run the food processor for a few more minutes so the seasonings can incorporate into the butter. Once the almond butter is to your desired consistency, remove the butter from the food processor, place it into a glass jar like this, and store it in the refrigerator for two weeks! Enjoy!
This raw almond butter is a protein, so it best combines with proteins or neutrals like all proteins.
An example of combining almond butter with other proteins – Turn the almond butter into a dressing seasoned with garlic and ginger and coconut aminos and toss with greens, and top with your choice of chopped nuts or perhaps a tiny piece of grilled salmon, chicken, tofu, etc.
An example of combining almond butter with neutrals – Spread almond butter on celery sticks into almond butter for a quick snack, make an almond butter dressing, and drizzle on roasted cauliflower.
