The go-to dijon vinaigrette is one of my favorite salad dressings because it combines well with proteins and starches! You can make a large salad with your choice of greens and various vegetables and then serve it with a starchy vegetable like sweet potatoes or a grain like quinoa. If you prefer animal protein, wild salmon or free-range grilled chicken would be excellent, topped up on a salad with this dijon vinaigrette!
