Instead of your typical ground beef or pork, Brussel sprouts offer crunchy texture with a burst of flavor. Not only are Brussel sprouts much healthier than traditional tacos loaded with cheese and fatty meats, they can also add a substantial variety of vitamins and fiber to your diet. Even better, Brussel sprout tacos can be made even more nutritious by adding black beans which offer protein and other essential nutrients without the saturated fats that are usually included with animal proteins.

To get the perfect flavor/texture combination for your Brussel sprouts, start by shredding the Brussel sprouts into thin slivers. This helps give them a texture that is similar to shredded chicken and allows the spices to coat the Brussel sprouts more easily. The combination of spices adds a slightly smoky and spicy flavor to the mild Brussel sprouts. 

Additionally, I like to add a homemade combination of vegan mayonnaise and hot sauce to the top of these tacos for additional spice and depth of flavor. (Favorite hot sauce here) Other toppings that go well on this dish are chopped avocado, chopped cilantro and thinly sliced radish.

Ingredients

1 14oz can Black Beans

1 Bag Brussel Sprouts (Shredded)

1 Yellow Onion

3 Cloves Garlic (Minced)

2 Tsp Garlic Powder

2 Tsp Onion Powder

1 Tsp Chili Powder

1 Tsp Cumin

1/4 Tsp Paprika

1 Tbsp Olive Oil

2 Tsp Coconut Aminos

Salt & Pepper To Taste

Instructions

Begin by rinsing and shredding the brussel sprouts and set aside. My preferred method is with a mandolin to ensure all pieces are the same size. In a medium pan with olive oil, add your sliced onion and minced garlic and cook until the onions are translucent and the garlic is fragrant. Next, add the rinsed brussel sprout and all your spices (Garlic powder, onion powder, chili powder, cumin, paprika and coconut aminos) and cook on medium until the desired texture is reached.

Once the brussel sprouts are cooked to your liking, add a 14oz can of drained and rinsed black beans and let simmer until cooked thoroughly. Check for any extra spices you made need.

Plate the brussel sprout tacos on your favorite tortilla with some salsa, lettuce, chopped avocado, thinly sliced radish and minced cilantro and enjoy! I also like to add some depth to the tacos by adding a mixture of vegan mayonnaise an hot sauce to the dop of each as well!
