This tasty side dish is made with only a handful of ingredients and is made even easier when using frozen cauliflower rice The frozen cauliflower is already cut up into small pieces which makes it cook quickly and easily. All you need to do is steam the cauliflower in a pan with some water until it’s softened, fluff the rice and then add in the cilantro, lime juice, and spices mix everything together, and voila! Top with some olive oil and you have yourself a delicious yet elevated side dish. 

What is riced cauliflower made of?

Riced cauliflower, also known as cauliflower rice, is simply cauliflower that has been chopped into tiny rice-sized pieces. It can be used as a low carb alternative to rice but can be used in many other ways as well, like cauliflower mashed potatoes!

Is cauliflower rice better for you than regular rice?

Cauliflower rice is considered healthier than rice because it’s lower in calories and carbohydrates, is a good source of fiber, higher in B vitamins, higherin vitamin C, higher in vitamin K1, and in some trace minerals!

Does cauliflower rice taste like rice?

Cilantro Lime Cauliflower Rice

Ingredients

  • 12oz Frozen Cauliflower Rice ( I like the Trader Joes Brand)
  • Zest Of Whole Lime
  • Juice Of Half A Lime
  • 1/2 Tsp Onion Powder
  • 1/2 Tsp Garlic Power
  • Salt To Taste
  • Pepper To Taste
  • 2 Tbsp Fresh Chopped Cilantro
  • 1 Tbsp Olive Oil

Instructions

Start by “steaming” the frozen cauliflower. I like to add about 1/4 cup filtered water to a pan, add the bag of frozen cauliflower, and lid the pan. Cook on medium heat for 8-10 mins, fluff the rice half way through, and re-lid. Once the rice is fully cooked and the water has evaporated, season with garlic and onion powder, salt and pepper. Give the rice a good stir to make sure the seasonings are equally distributed throughout! Next, drizzle in your olive oil, lime juice and zest. Lastly, top with your fresh cilantro just before taking off the stove and give the rice another quick stir and serve immediately!
